3-Step Soft Old-Fashioned Cherry Cake

This Cherry Cake is so delicious and vibrant! The cherries’ tart and sweet flavors combine to make a rich, juicy filling. Perfect to serve during a Fourth of July celebration, birthdays, anniversaries, or any other holiday! This simple dish has a sweet, luscious cherry filling with a soft buttery texture. It is made with minimal ingredients, only 5 and many generations have delighted in this cherished delicacy! Cozy and nostalgic at the same time!

There are dozens of different versions of the popular Cherry Cake, the simpler ones, and those that look more aesthetically beautiful. However, if you don’t have much free time to prepare a more complicated version, but still want the healthier and much easier version, you came to the right place!
This Cherry Cake is my grandma’s recipe that she has been preparing for decades, so it evokes huge nostalgic feelings about it. The original version has a lot of refined white, table sugar, which definitely doesn’t fit into my preferences, so I made my version without it! Don’t worry it is still wonderfully sweet!

There is no difference in flavor; the batter’s texture may become somewhat sandier, and the baked product’s final color may turn a little darker.

So, no worries, this recipe only requires 6 easy key ingredients – cherries, eggs, milk, flour, oil, sweetener of choice, and baking powder+ salt as the essential ones! Easy, right?

Ingredients You Need
Cherries – You can use both fresh or frozen cherries, but make sure to squeeze out the excessive liquid, but not all! A small amount of liquid in the cherries is favored to enhance the overall flavor and add juiciness. Make sure the cherries are pitted.
Eggs – You’ll need 3 medium-sized eggs at room temperature.
Yogurt – Use plain yogurt.
Oil – Make sure to use organic, high-quality neutral-tasting oil!
Unrefined sugar – You can make this recipe using less refined, and more natural alternatives like organic coconut sugar, date sugar, or stevia.
White whole wheat flour – I made this recipe using only white whole wheat flour, and haven’t experimented with other nut or gluten-free types, so I can’t give you a guarantee how it’ll turn out with them. However, you can try
Baking powder – To increase the volume and lighten the texture of the cake.
Salt – Preferably, use a higher-quality, less processed salt like sea salt.
How To Make
The whole process of preparing this beautiful Cherry Cake is insanely easy! That’s why it’s one of my favorite desserts, and it’s perfectly suitable for busy, and hectic days when you’re craving some healthier sweets! Let’s now make it, step-by-step!
Step 1: Prepare all the ingredients, wash the cherries, and prepare a baking rectangle pan covered with parchment paper. Preheat the oven to 180°C (356° Fahrenheit)
Step 2: Crack 3 eggs, and add 1 cup (or 1 1/2 cups) of sugar to it (coconut, date, or stevia). Mix it with a mixer until the mixture thickens. Add all the remaining ingredients to it, and mix until well incorporated – 1 cup plain yogurt, 1 cup neutral-tasting oil (with a high smoke point), 1 packet baking powder (10-12 grams), 3 cups white whole wheat flour, and 1/2 tsp salt.
Step 3: Pour the mixture into the prepared baking pan, gently fold in the cherries on top of the mixture, and place to bake in the oven for approximately 25-30 minutes (ovens vary) or until the top becomes golden and the toothpick inserted into the cake comes out clean.
Tips For The Successful Cherry Cake
- Adjust the flour – If you’re using some other type of flour, you may need to add more flour or less than this recipe originally calls for. Brands and flour types vary. The texture of the batter should not be too liquid nor too thick – the golden middle way is what we strive for! So, adjust your flour accordingly.
- Don’t overmix the cake batter – Mix the ingredients well until the flour is not visible anymore. There’s no need to overmix it otherwise, the cake may turn out denser.
- Wash and drain the cherries well – Whether you are using fresh or frozen cherries, make sure to squeeze out excessive liquid from the cherries in order to prevent the cake from being too soggy and crumbly.
- Put a lot of cherries – Make sure to put a lot of cherries on the cake batter and not just a few to fill in the blank space! This will result in a much more juicy and refreshing cake!
How To Store This Cherry Cake
This Cherry cake can last approximately up to 5 days at room temperature.
You can also place it in the refrigerator but it may result in a much denser and less juicy taste.
