Ingredients You Need

Apple – Aside from their apparent color variations, red and green apples differ most noticeably in that red apples often have a sweet flavor rather than a sour one, while green apples typically have a sweet and sour flavor. For this recipe, I used a red apple, but if you prefer a more sour flavor, you may use the green one.

Cinnamon – adds a delicious warming effect to the smoothie and is also packed with various nutritious ingredients, with antioxidant, anti-inflammatory, and antimicrobial properties. (1)

Honey – without the need for additional sugars or artificial sweeteners, honey may naturally sweeten and flavor your cake.  Many health advantages come from raw honey that has been separated from the honeycomb. During processing, some of honey’s beneficial components, like bee pollen and antioxidants, may be lost. Sweeteners may also be added to it. (2)

Whole Wheat Flour – It creates a structure. Natural sources of the protein gluten include various grains including wheat, barley, and rye. It functions as a binder, securing the food and giving it a “stretchy” characteristic. It’s a good source of protein, fiber, and a variety of vitamins and minerals. White or all-purpose flour and whole wheat flour can both be used in a recipe in the same proportions. Because it is unrefined, keep in mind that it creates a less fluffy texture than white flour, but it is also a much healthier option. (2)

Coconut oil – Coconut oil is an effective substitute for butter in recipes, and it has a better fat ratio. Additionally, it will give your cake a little coconut-y taste. The best option would be sugar-free, extra virgin coconut oil.

Salt – Without giving your pancakes a salty flavor, a sprinkle of salt will improve the overall flavor.

Dark chocolate – Quality dark chocolate with a high cocoa content is very nutrient-dense since it is abundant in minerals and has a fair amount of soluble fiber. Just like with coconut oil, look for non-sweetened dark chocolate.

Baking soda & Baking powder – Although you might exclude baking soda from your recipe, keep in mind that the result won’t be the same. Your pancakes won’t be fluffy, and your cookies will probably be flat. You’ll notice differences in the texture, but they’ll still taste delicious.

Making this apple and cinnamon mini vegetarian cake is insanely easy, and it will take you around 5 minutes to do the work that’s on your side. The rest is the baking time, which will take approximately around 20-25 minutes.

1. Preheat the oven to 180C/350F.

2. In a larger bowl, add whole wheat flour, coconut oil, honey, salt, baking soda, and baking powder. Mix well, evenly. Then, to that mixture, add one large grated apple. Mix everything evenly together again.

3. Prepare baking mold (or any other baking equipment you have for this specific amount of mixture that you can bake in) with parchment paper. * If you don’t have parchment paper or want to do things the old-fashioned way, grease the baking mold with a cooking spray such as olive oil or sunflower oil.To make sure the flour sticks to the oil, after greasing your cake pan or baking sheet, sprinkle some flour over it and shake and roll it about. Tap the extra flour into the sink once it is evenly attached.

4. Put your mixture from the mixture bowl into the baking mold.

5. Place it in the oven, and bake for approximately 20-25 minutes. * Make sure to check to see whether it is cooked through; if not, bake it for a few minutes more, being cautious not to burn it.

6. Remove from the oven and let it cool for a couple of minutes. In the meantime, chop another smaller apple, melt 2 cubes of dark chocolate, and put them as a topping. Enjoy!

  • 5 tbsp whole wheat flour
  • 2 tbsp cinnamon
  • 4 tsp honey (non-sweetened, raw)
  • 1 tbsp coconut oil
  • 2 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt

Topping – after baking

  • 1 apple (chopped)
  • 2 cubes of dark chocolate (unsweetened; melted)

Instructions

Notes

* (1) The main flavor difference between red and green apples is that red apples frequently have a sweet flavor as opposed to a sour one, whereas green apples generally have both a sweet and sour flavor. I used a red apple for this recipe, but you could use a green apple if you want things to taste more tart.
  • also, note that this recipe uses only 1 large apple for the mixture, considering that it is meant for 1 serving, a maximum of 2 people. If you’re preparing the cake for more people, the amount of ingredients you put will be increased.
