Why You’ll Love This Recipe?

  • It only takes 5 minutes of preparation time + SO EASY – This recipe will only take 5 minutes of your time for preparation with an insanely simple few steps – mixing all ingredients together, and putting them into the muffin baking pan. That’s the whole philosophy! Simple and practical, right?
  • You only need 4 simple main ingredients with minimal measurements – This Banana Chocolate Muffins recipe only calls for a handful of everyday ingredients, you probably already have in your kitchen, so there’s probably no need to run to your nearest farmer’s market or store to get them – you’ll only need 1 banana, 2 eggs, 50 grams of oat flour, baking powder, and high-quality dark chocolate for topping – you can also add some to the actual mixture!
  • Super Healthy + No refined sugar – naturally sweetened – Overripe bananas are essential for this recipe, as underripe ones are very stiff and would result in a lumpy mixture. Additionally, they are less sweet, which will change the flavor. You can also add a few tablespoons of raw honey to enhance the sweetness in a natural and healthier way!

Ingredients You Need

  • Eggs
  • Banana – Overripe bananas are essential for this recipe, as underripe ones are very stiff and would result in a lumpy mixture. Additionally, they are less sweet, which will change the flavor.
  • Oat flour – For this recipe, I used oat flour, but I guess you can also use almond flour or wheat flour.
  • Baking powder – to increase the volume, and make the muffins fluffier!
  • Salt – preferably fine grain Sea salt or Himalayan salt to balance the flavor.
  • High-quality dark chocolate for topping – Using organic dark chocolate instead of the milk one is a much healthier option, even though regular milk chocolate will also work if you want the sweeter version.

Tips And Ideas For Making This Recipe

  • To estimate if the muffins are baked well enough, use the old trick with a toothpick. Just place a wooden toothpick close to the middle of the muffin, and then check the rest of it. The muffin is done if a toothpick inserted into it comes out clean.
  • Add some nuts – To make a minor variation, you can also mix in some nuts. Grated hazelnuts, almonds, or walnuts would potentially fit great, as well as dried raisins for an enhanced flavor!
  • You can also add a tablespoon of melted peanut butter to the mixture to enhance and sweeten the flavor even more! Such a good and yummy addition!
  • You may also add half a teaspoon of cinnamon to the mixture; this is a really tasty fall addition!

How To Make

Step 1: Preheat the oven to 360 degrees F (180 degrees C). Line a 12-cup muffin tin with paper liners.

Step 2: With a fork, in a medium bowl, mash the banana until there are no lumps and an even consistency is achieved, crack 2 eggs, and add them to the mashed banana. Mix all together with a spoon until well combined. Add 50 grams of oat flour and 1 tsp baking powder. Mix again.

Step 3: Pour into a prepared muffin baking pan and add pieces of finely chopped or diced dark chocolate on top of every muffin.

Step 4: Put and bake for 20-25 minutes or until a toothpick comes out clean. Do not overbake.

Step 5: Cool for 10 minutes before serving. Enjoy!
