This recipe for roasted mushrooms is one of my favorites because of how flavorful it is with so few ingredients and easy procedures. They baste in their juices during baking, requiring just a little piece of margarine, and they always turn out wonderfully moist and tender! Even though they don’t look like it at first sight!

The best part is that it still tastes very good and satisfying without needing a ton of additional ingredients! This recipe is for you if you’re too busy or lack the time to make more difficult dishes that call for 10 or more ingredients.

Ingredients You Need

Mushrooms – Almost any kind of mushroom will work. I combined shitake and brown mushrooms (also known as gourmet, cremini/crimini, or chestnut mushrooms) in this variation. However, medium-sized portobello mushrooms can also be used.

Butter or Oil – You can use butter, margarine, or even olive oil so it can produce a beautiful color while maintaining the juicy inside. Later on, you can put some butter to adorn them.

Salt – To balance and enhance the overall flavor. Preferably use sea salt or Himalayan salt.

Optional garnishes: Lemon juice and garlic cloves — these provide a really flavorful touch to buttered mushrooms. However, it’s not necessary because just roasted mushrooms are delicious as they are!

How To Make

STEP 1: Preheat oven to 200°C/392°F.

STEP 2: Remove the stems from the mushrooms and spread them on a baking tray covered with parchment paper.

STEP 3: Cut ½ to 1 inch of margarine (depending on the size of the mushroom) and place it in the mushroom hole so it can spread when melted. Salt each mushroom with a pinch of salt. Also, toss with some minced garlic cloves if you like (totally optional).

STEP 4: Place in the oven and roast for about 20 minutes – do not toss or turn.

STEP 5: Remove from oven, sprinkle with some lemon if you like, and serve immediately! Enjoy!

These mushrooms are ideal to serve as a side OR as a main dish, but due to the fact that they are extremely low in calories, you’ll probably be starving in an hour! Lol! I love to eat them more as a side dish, alongside some mashed or roasted potatoes or fish!
