Dates – Medjool dates are often more expensive than the regular dates, but you can use any type you have at hand. They are a wonderful natural refined sugar substitute! Before using your dates in this recipe, soak them in hot water for 5-10 minutes so they can be peeled easier. To prevent adding too much water to the food processor and overly softening the carrot cake balls, make sure to thoroughly drain before adding them.
Raisins – You can add draied raisins into the blending mix if the mixture is not sweet enough for your preferences.
Walnuts – You can also use some other nut substitutes like ground almonds or hazelnuts, but they’re much harder to blend than the walnuts.

Step 3: Repeat processing until a sticky batter is formed. If it’s too dry, process to integrate with a little more maple syrup or plain water.

Dates Tips – If your dates aren’t really soft and mushy, soak them for 10 minutes in a warm water, then drain and pit them.
Measuring – To ensure an exact measurement, pack your half cup of dates firmly if you don’t have a scale. However, there may be some variations of the amount of ingredients, so, you can just add or omit some ingredients until you get the mixture that is not too crumbly and not too soft (and unable to hold a ball).
Ball creation – Try mixing the dough for a little while longer to allow all the components to break down further and get sticky if it isn’t sticking together.
