Ingredients You Need
- Zucchini (grated) – You’ll need 1 medium zucchini.
- Carrot (grated) – You’ll need 1 medium carrot.
- Onion (finely chopped) – You can use either yellow or red onion.
- Cheese (grated) (optional) – You can use Cheddar, or Parmesan cheese, or any other type suitable for grating. It is not a necessary ingredient and could be used to enhance the overall flavor and add a melty taste.
- Whole Wheat Flour – You can also use some other gluten-free flour, but make sure to adjust the thickness based on the amount of zucchini, and carrots, you may need less or more flour.
- Eggs – 2 medium-sized eggs at room temperature.
- Salt – Preferably higher-quality, less refined salt, like sea salt.
- Olive oil or lard – To cover the bottom of the pan.
How To Make
Step 1: Grate the zucchini, carrot, and onion, and before transferring it into the medium bowl, with hands, squeeze out the excess moisture from them.
Step 2: In a bowl with grated ingredients, first add 3 tablespoons of whole wheat flour, and stir it well. Crack 2 eggs, and add to the mixture. Stir it well again, and add another 2 tablespoons of flour. Salt it to taste with salt. Depending on the amount of grated ingredients and flour type, you may need more or less flour, so adjust accordingly. The mixture should be smooth, not too liquid nor too thick and dry.
Step 3: Preheat a pan over medium heat, and add oil (or lard) enough to cover the bottom of the pan. Also, prepare a plate with a few paper towels you’ll place below and on top of the fritters once they’re ready, so it can soak excess oil from the fritters in case you put more.
Step 4: With a spoon, add the mixture to the pan for cooking (I added 4 simultaneously), and wait until the bottom part becomes golden (30 seconds to 2 minutes, it depends), and flip to the other side to cook as well until it gets that golden-brownish look. How much you’ll wait for one side to coo depends on the size of the fritters, as well as on the amount of oil you put in. If you exaggerate a bit with oil, the fritters will cook a lot faster – have that in mind.
Step 5: When each fritter individually is ready, place it on the plate covered in a paper towel, and leave for a couple of minutes so that the towel can soak in excess oil, and for the zucchini fritters to cool a bit. Enjoy!
