The one thing is sure – you won’t be left out hungry afterward! Don’t ask me how many times I didn’t even eat all of them – it fills you up pretty quickly! But, the good thing is that you always can leave the rest for later!

Ingredients You Need

Zucchini – Pick up some fresh zucchini from your garen or from the farmer’s market and don’t forget to squezze out he excessive liquid out of it!

Carrots – You’ll need 2 medium carrots.

Onions/Scallions – Here is the best part! You can use red onion, yellow, white onion, scallion, garlic, or mix of all of them for the nutrition boost! Whatever your heart desires! Each of them will provide a special spark and make it unique.

Eggs – You’ll need 2 medium-sized eggs to bind all the ingredients together and provide structure.

Whole Wheat Flour – In case you don’t have the whole wheat flour at hand, you can use some other gluten-free alternatives, it really doesn’t matter since we’ll only need a small amount of flour.

Yogurt/Water – Since there is an abundance of veggies, the mixture may be too dry when mixed with eggs and flour, that’s why we’re using plain yogurt to ad moisture and additional flavor! However, if you don’t have yogurt on hand, you can simply use water instead.

Spices – Feel free to add whatever amount of your favorite blend; I just used one for convenience. Every time you cook them, you’ll feel as though you’re eating something different because of the flavoring changes!

Salt – Make sure you’re using higher-quality salt, like Himalayan salt, or sea salt.

Optional Ingredients

Feta cheese – Crumble some feta cheese over the top to add a burst of saltiness that complements the mixed veggies and lends them a taste of the Mediterranean. To maintain its vegan and dairy-free status, you can use feta cheese made from plants.

Cheddar/Gouda cheese – Grating some Cheddar or Gouda cheese will definitely boost the flavor and give the fritters that cheesy taste. Make sure not to exxegarate and ad too much since we still need that veggie’s flavor.

Alternatives, Tips & Tricks For The Best Veggie Fritters

  • Use organic lard for cooking instead of olive oil – Not only that it tastes better, but according to many resources it is possibly even healthier to cook with lard than any oil, especially refined ones. Even though I don’t usually eat fried food, I grew up eating fried food only on lard that’s what my grandparents primarily used, and the taste is even better than when made with oil, if you ask me! However, if you are used to cooking with oil, make sure you choose one that is less refined and has a high smoke point.
  • Add some grated cheese – You can add some Cheddar or Gouda cheese or even Feta cheese to add some additional flavor and cheese taste to your veggies! Believe me, it’s definitely worth it!
  • Add different veggies – These veggie fritters can also be made with a combination of any veggies or just add some other veggies to the existing ones to spark up the taste! I’ve prepared them here with potatoes, zucchini, spinach, carrots, and bell peppers, but you may substitute your own vegetables or whatever you happen to have on hand. Let me know how it tastes!

Ingredients
  

  • 2 cups (approximatelly 2 medium) grated or shredded zucchini
  • 2 medium carrots
  • cup diced scallions/red/yellow/white onion
  • 3 garlic cloves (minced)
  • cup (80 grams) whole wheat flour (see notes)
  • cup plain yogurt/water
  • olive oil/organic lard (for cooking)
  • a pinch of salt
  • spices of choice (optional)

Instructions
 

  • Grate zucchini and carrot, squeeze the excess liquid out of them (press them gently over the sink), and place them in a medium bowl. Add minced garlic and diced onion.
  • Add whisked eggs, flour, yogurt/water, salt, and desired seasoning. Stir well to incorporate all the ingredients. (see notes)
  • Place paper towels over a large plate where you will transfer the fritters after cooking so that the towel can soak up excess oil.
  • Add olive oil/lard to a large saute pan on meidum-heat. When slightly heated ad about 1 tablespoon of the mixture into the pan, flattening it just a bit with a spoon. Continue adding the mixture in the same way, keeping the fritters about 1 inch apart.
  • Let fritters to cook for 2 minutes and then flip to cook the other side until golden brown. Transfer them to a prepared plate and let the papers soak all the excess oil.
  • Serve, and enjoy!

Notes

  • Flour & Water/Yogurt measurements – The amount of yogurt/water you are going to add may vary due to the flour type you’re using and individual measurements of vegetables used. You may need to adjust and use less or more in order to make the proper mixture which must not be too liquid nor too dry.
