Ingredients You Need
All you need for these Spinach Cheese Rolls is a few basic pantry ingredients in minimal amounts! The recipe card below has the precise measurements. An outline of everything you’ll need is as follows:
Spinach – Ideally use fresh spinach straight from your garden or farmer’s market. I haven’t tried making these Spinach Cheese Rolls with frozen spinach since it may be too watery.
Eggs – You’ll need 2 medium-to-large eggs at room temperature.
Cheese – You can experiment with different types of cheeses such as Feta, cream cheese or cottage cheese. Personally, I think that Feta cheese is the perfect option!
Yogurt (optional)- We’re using yogurt for the additional flavor and creaminess, and the extra liquid if the egg yolks don’t provide the needed amount.
Garlic – Garlic is low in calories and rich in vitamin C, B6, and manganese and helps support the immune system! It gives a wonderful strong aroma and nutrient boost to the meal!
Olive oil/Butter/Lard – Used for cooking. Not only does cooking with lard taste better, but several sources also suggest that it may be healthier than cooking with any other oil, particularly processed oils. Even though I don’t often eat fried food, I grew up eating it exclusively prepared with lard because that’s what my grandparents used to make it, and I think the flavor is even better than when it’s done with oil! If you are accustomed to using oil for cooking, be careful to select an oil with a high smoke point and minimal refinement.

Variations
I nearly usually follow the recipe exactly since I adore it that way. But here are some suggestions if you want to change up the basic recipe:
- Cook the eggs with butter or lard instead of olive oil.
- experiment with different cheese types (you don’t strictly need Feta) like Mozzarella, cream cheese or cottage cheese.
- Sprinkle some seasonings such as garlic powder, dried thyme, or dried oregano.

FAQ
Can I use frozen (thawed) spinach?
I haven’t experimented with frozen (thawed) spinach for this recipe, so I wouldn’t recommend it, since it may be too watery. I used freshly washed and then dried spinach straight from my garden, so I would recommend the same for you too!
Should I chop spinach leaves?
I personally like to chop them, but you don’t need to if you don’t prefer. I also remove the steam from the leaves.

Cheese, Egg & Spinach Omelette Roll
Ingredients
- 1 cup fresh spinach (washed and dried)
- 2 medium-to-large eggs
- ¼ cup (40-50 grams) Feta cheese (alternatives: cream cheese, cottage cheese)
- salt to taste
- 2 garlic cloves (minced) (optional)
- 3 tbsp plain yogurt (optional) (see notes)
Instructions
- Wash the spinach and dry it with a paper towel. Remove the stem and chop finely. Leave aside.
- In 2 smaller bowls, separate egg whites and egg yolks. In a bowl where the egg white is, add chopped spinach and mix carefully a few times, enough for the spinach to be incorporated into the egg whites. You can add here minced garlic if you desire.In the bowl with egg yolks, add cheese and whisk with a fork. Set aside. If the egg yolk mixture seems too little (depending on the egg size) you can add 2-3 tablespoons of plain yogurt, and mix it.
- Warm olive oil/butter/lard on low-to-medium heat in a pan. Carefully add the egg white-spinach mixture making a medium-sized circle. Let it cook until it gets the golden-brownish edges, then flip and wait for the other side to cook as well. When done, with a fork carefully fold it into a roll, and leave it on the other side of the pan.
- Carefully pour the egg yolk mixture into the pan into a big circle. Wait for it to cook on one side. If it's possible, flip for the other side to cook for a few seconds, if not, immediately place the folded spinach roll on the side of the egg yolk spread and start rolling it carefully with the help of the fork and spatula coating the spinach roll with the egg yolk. The roll should be like in the picture below. Flip the whole packet over so that both sides can be cooked for another 30 seconds.
