Simple, quick, healthy, and nutrient-rich Cheese And Potato Pie is, believe it or not, made in just a couple of uncomplicated steps and 9 main ingredients you probably already have in your pantry! So, no worries! You most probably won’t have to run to the nearest store or farmers market to get them!

In case you have no idea what to prepare for either breakfast or dinner, and you want it to be quick and healthy, look no further, you came to the right place! This is one of my grandma’s old recipes where you need everything 2… two potatoes, two eggs, 2 garlic cloves… So, we won’t be needing the huge amount of every required ingredient! What a minimalist, but filling Cheese and Potato Pie! Exactly what we need! You most certainly won’t be hungry after!

So, this is one of the easiest recipes that require only a couple of steps for preparation – basically, mixing the ingredients, and pouring them into the baking pan! Lol, can it get easier?

We will only be mixing all the ingredients with a spoon or spatula, layer it into the baking pan, drizzle some grated cheese, and pour another layer of mixture. Then, straight to the oven!

Ingredients You Need

  • Potatoes (2 medium-to-large) – I guess that any kind of potato will go well, but I used a mix of red and yellow potatoes. The red potato may be lower in calories and carbs, but the yellow potato is a better source of iron and calcium.
  • Eggs (2 medium)
  • Garlic cloves (2)
  • Yogurt (2 tablespoons
  • Oil (1 tablespoon) – Vegetable oil makes baked goods lighter and moister. Make sure you use high-quality oil like olive oil.
  • Semolina (2 tablespoons) – Semolina flour, which is produced by coarsely grinding durum wheat, provides bread, pizzas, and pasta a nutty, sweet flavor and a light yellow hue. It is used as a flour substitution to soak in excessive liquid.
  • Baking powder – I used one pack of 12 grams.
  • Salt and ground pepper – Basic seasonings to enhance the natural flavors of the roasted potatoes! Avoid using table salt, and if you can, use sea salt or Himalayan salt. The black pepper is completely optional if you don’t like it!
  • Parmesan (grated)
  • Cottage cheese – For this recipe, I used a mix of cottage cheese and Feta.

Pro tip: There is one simple tip that my grandmother taught me when it comes to potatoes, and that is to wash sliced potatoes in water to get rid of the starch! How she does it is placing the sliced potatoes in a couple of water bowls and washing them, and each time getting the new clean water and washing them again. You will see the water getting that white hue each time – that means the starch is getting out.

How To Make Cheese And Potato Pie

Making this super savory and soft cheese and potato pie can’t be easier! It only requires a couple of steps, and 2 bowls to wash afterwards!

Step 1: The first thing we need to do is grate the potatoes and place them in cold water for 5 minutes so that they release the starch. Do that two times – the second time you can just wash the potatoes, no need to keep them in water.

Step 2: In a medium bowl, whisk 2 eggs, add 2 tablespoons of semolina, and add baking powder (2 teaspoons – equal to 1 pack of 12 grams) to it. Mix it well, then add 2 tablespoons of yogurt and 1 tablespoon of oil to the mixture. Mix it well again.

Preheat the oven to 200 °C or 392 (°F).

Step 3: When the potato is ready, squeeze the excess water and place the potatoes in another large bowl. To that large bowl and the egg mixture, you prepared previously. Add salt, and ground pepper to it, minced garlic cloves, and cheese of choice (cottage cheese or Feta).

Pro tip: If you are using Feta cheese, you may unintentionally add some liquid that comes with it depending on the type of cheese. That may make the mixture more liquid than needed. If that happens add more semolina which will help soak in excessive liquid. The mixture must not be too liquid or too dry.

Step 4: Prepare the baking pan and place the parchment paper in it. Drizzle some oil on the parchment paper and spread it evenly with your fingers, so that the pie doesn’t stick to the paper.

Step 5: Pour half of the pie mixture into the baking pan and press it gently with a spoon. On top add some grated parmesan, then pour the rest of the remaining mixture. Using a spoon, press it gently. If you want, you can drizzle some sesame seeds on top.

Step 6: Place the mixture in the oven and bake for approximately 35-50 minutes at 200 °C or 392 (°F) until it gets golden on the outside. Check occasionally to see how it is progressing, because, depending on the oven, the baking time may differ.

Pro tip: In order to estimate if the pie is baked well enough, use the old trick with a toothpick. Just place a wooden toothpick close to the middle of the pie, and then check the rest of it. The pie is done if a toothpick inserted into it comes out clean.

Ingredients

  • 2-3 tbsp semolina
  • 2 tsp baking powder (one pack of 12 grams)
  • salt, ground pepper (to taste)
  • 50 grams grated parmesan
  • 50-80 grams cheese (cottage cheese, Feta)

Instructions
