Ingredients You Need

There’s a popular “only zucchini” version of these breadsticks, but I decided to experiment a little and add some richness to the recipe! You can freely make the first version with only zucchini, in that case use 2 medium-to-large zucchinies to make up for the other ingredients. Here are the ingredients for my version:

  • Zucchini – You’ll need 1 medium sized zucchini.
  • Carrot – You’ll need one medium-to large carrot.
  • Apple – You’ll need 1 medium-sized apple of any sort.
  • Parmesan: I used 1/2 cup of finely shredded parmesan cheese in the breadsticks.
  • Egg: A large whole egg helps bind the ingredients together and give it rise.
  • Italian Seasoning: The secret ingredient that gives the incredieble flavor!
  • Salt & Garlic Powder: You’ll need half a teaspoon of each.

How To Make

Step 1: Prepare: Place the parchment paper in a 9×13 baking dish and preheat the oven to 400˚F (200˚C).

Grate zucchini, carrot, and an apple, and squeeze the excessive liquid out of them using a paper towel or with your hands over a sink. Season with 1 tsp of salt. After 10 minutes of standing and a few stirs, use your hands to remove any remaining liquid.

Step 2: Transfer the grated ingredients into a medium bowl, whisk an egg, add grated parmesan, and season with Italian seasoning. Stir well.

Step 3: Transfer the mixture into a suitable baking pan, and bake for approximately 15-20 minutes. After that time, take the pan out, and add the remaining grated parmesan on top. Take it back into the oven for the cheese to melt (around 5 minutes). Serve and enjoy immediately!

Tips For The Cheesy Zucchini Carrot Apple Breadsticks

  • Squeeze the liquid. Squeeze the liquid out of the shredded zucchini by placing it in a kitchen towel or by squeezing it with your hands into the sink. Your crust will become more crispy and bread-like as you extract more moisture. Don’t skip this part, otherwise it will stay too watery.
  • Place some breadcrumbs in the bottom of the pan. To make sure the excessive liquid is soaked, you can sprinkle some breadcrumbs to the bottom of the pan that will do the job.
  • Try various cheeses (or herbs). This baked zucchini breadsticks dish would also taste great with fresh herbs like rosemary, oregano or some other type.
  • Bake longer if mixture is still watery. Once the sauce has thickened, bake the breadsticks more , and reduce the oven’s temperature to 350 degrees Fahrenheit for an additional 10 to 20 minutes.
  • Serve the breadsticks immediately! The optimum time to eat them is directly from the oven when the cheese has completely melted.
