1. STEP – Start by peeling off the date’s skin, and pitting dates, and grating dark chocolate.
2. STEP – Process all the ingredients – the pitted dates (do not forget to peel off the skin – soak dates previously in warm water for a couple of minutes until they’re tender enough to be easily peeled off); flour, desiccated coconut, grated dark chocolate, cacao powder, sea salt, a few drops of orange juice – to taste (just squeeze orange) in a food processor and process until the mixture is well formed, thickened, and the mixture starts to clump together and can be easily held together when squeezed.
3. STEP – measure the 1 tsp portions of the mixture and use it to form a ball with your hands, rolling them (If the mixture seems to be sticky, grease your palms with a little bit of coconut oil). Repeat the same process until the mixture runs out.

- 50 grams oat flour (or white whole wheat)
- 10-12 medium dates pitted, peeled (see notes)
- 1 tbsp cacao powder (organic if possible)
- 30 grams desiccated coconut
- 20 grams grated dark chocolate
- 1 tsp orange juice drops (squeeze orange – to taste )
- a pinch of sea salt
Instructions
- Start by peeling off the date's skin, and pitting dates, and grating dark chocolate.
- Place all the ingredients (pitted dates, flour, desiccated coconut, grated dark chocolate, salt, cacao powder, and a few drops of orange juice) into a food processor, and process until they're finely ground, thickened, and everything is well combined (for about 2 minutes). *(1)
- Scoop the dough with a teaspoon, or a small ice cream scoop, and form the small balls with your hands. *(2). Roll them into the desiccated coconut that's left, or any other ground nut of choice.
