  • Potatoes: I guess that any kind of potato will go well, but I used a mix of red and yellow potatoes. The red potato may be lower in calories and carbs, but the yellow potato is a better source of iron and calcium.
  • Olive Oil: This will keep the insides fluffy and soft while contributing to that golden, crispy outside. Additionally, olive oil gives the potatoes a subtly rich flavor that goes nicely with them. You can also use other roasting-suitable oil, but I prefer olive oil and always have it in the pantry.
  • Garlic (optional) – These roasted potatoes have that strong fragrant flavor from the finely minced garlic or garlic powder, which gives each bite a delicious garlicky taste.
  • Dried Ground Herbs (like thyme, and oregano): Thyme enhances the roasted potatoes with its earthy tones and pairs beautifully with garlic! I also love oregano and that strong, highly herbaceous flavor it gives to anything!
  • Salt and Ground Black Pepper: Basic seasonings to enhance the natural flavors of the roasted potatoes! The black pepper is completely optional if you don’t like it!

  • There is one simple tip that my grandmother taught me when it comes to potatoes, and that is to wash sliced potatoes in water to get rid of the starch! How she does it is placing the sliced potatoes in a couple of water bowls and washing them, and each time getting the new clean water and washing them again. You will see the water getting that white hue each time – that means the starch is getting out!
  • To prevent them from steaming, make sure they are completely dry before adding the olive oil!
  • Make sure there is some room between the potatoes. To ensure that these garlic-roasted potatoes cook evenly and to perfection, try not to pack the pan too full otherwise, they will stick to each other; instead, aim to leave a little space between each.
  • Make sure the potatoes are layered evenly and that their flat sides are flush with the pan in order to help in their golden coloration.

How To Make Roasted Potatoes

Step 1: Preheat the oven to 392°F (200°C).

Step 2: Wash potatoes and cut into the desired size cubes.

Step 3: Wash them in a couple of water bowls as described above.

Step 4: Place on a baking sheet and toss with some olive oil, preferred seasonings, and ground herbs. bake for 30-35 minutes until browned and tender.

What Temperature To Roast Potatoes?

Depending on the size of your potatoes – how you cut them, will vary the time needed to roast and get that crispy exterior. I roast them for around 30 minutes at 400°F (200°C). You can cook potatoes at a lower temperature if necessary or slightly higher (although you might need to bake them for a longer/shorter period), depending on what else is in the oven and their size.

  • Experiment With Different Herbs – If you don’t have the thyme, no worries, you can easily swap it with other seasonings like Italian herbs, rosemary, parsley, or even Chayyene pepper for the spicy lovers… Experiment a little, maybe you come up with something even better!

Ingredients
  

  • 3-4 medium potatoes (more/less depending on the desired amount)
  • 2-4 tbsp olive oil (or other suitable baking oil)
  • dried ground herbs (like thyme, and oregano) (to taste)
  • salt and black pepper (to taste)
  • 1 tsp garlic powder (or finely minced garlic cloves) (optional)
  • other seasoning by choice

Instructions
 

  • Preheat the oven to 392°F (200°C).
  • Wash potatoes and cut into the desired size cubes.
  • Wash them in a couple of water bowls as described above. (to get rid of starch)
  • Place on a baking sheet and drizzle the olive oil over the potatoes, then sprinkle on the garlic powder, salt, and other preferred seasonings.
    (make sure to add enough oil so that the potatoes don't turn out dry).
  • Bake for 30-35 minutes until browned and tender.
  • Serve warm an enjoy!
