They’ve even taken the top spot on the holiday menu!

Ingredients You Need
Wait, now, for real – no eggs, no flour, no bake, plus, at top of all that, they’re unreal-soft, chewy, perfect texture? Say less, yeeesss! To make these Dates Peanut Butter Cookies you will only need 4 simple main ingredients you probably already have in your pantry, so one more lucky thing – there will probably be no need to go ingredients shopping!
- Dates
- Basic plain cookies – graham crackers (or similar ones like digestive biscuits, Marie biscuits, or rich tea biscuits) – The cookies (biscuits) need to be classic, basic, and plain. Depending on where you live those cookies have different names. Just remember that the tastes of these cookies and biscuits vary, which will impact the biscuit cake! Therefore, you might need to use fewer of them to prevent the biscuit from becoming dry and crumbly.
- Peanut butter – You can use smooth already made peanut butter, or you can simply make your own by adding unsalted peanuts and blending them – which may be a more demanding way, and you may not get the desired consistency. So, I recommend using the already-made 100% peanut butter.
- Dark chocolate – Using organic dark chocolate instead of milk one is a much healthier option, even though regular milk chocolate will also work if you want the sweeter version. The majority of dark chocolate contains flavanols, which are plant compounds. Antioxidants called flavanols have been connected to a decreased risk of heart disease. Theoretically, dark chocolate has more flavanol, which has more health benefits. (1)
Tips, Ideas, And Alternatives
How much additional sweeteners you will use depends on the dark chocolate and peanut butter sugar percentage and the cookie’s level of sweetness as well. These differ from brand to brand, but check them at the nutrition table at the back of the product so you can adjust sweetness to your taste and know how many other sweeteners such as honey or date you should add!
- Walnuts (or other nuts of choice – almonds, hazelnuts…). You can also add some nuts in the mixture to enhance the flavor. Hazelnuts and almonds are the hard type of nuts and may be harder to blend and chew, while walnuts are the softer type, and blend much quicker and easier.
- Honey – Using honey is not necessary, I personally didn’t use it, but it may be useful for adding extra sweetness if your cookies, chocolate, and dates do not provide much sweetness. Before adding it, try the mixture to estimate if you indeed need it.
- Salt (preferably sea salt or Himalayan) – Salt helps to balance out the sweetness and enhances the flavor of the ingredients.

How To Make Dates Peanut Butter Cookies
Step 1: Place the dates in warm water for 5 minutes so that they can peel better.
Step 2: Blend peeled and pitted dates alongside graham crackers and nuts of choice if using. Blend until desired smooth consistency forms thick enough to make a ball with hands. When ready, create medium-sized balls with your hands and press them with your palms to create a flat look. Leave in the refrigerator for around 20 minutes.
Step 3: The next step is melting dark chocolate and adding 1 teaspoon of coconut oil to it to create a more liquid texture. Stir until well combined. If you don’t have coconut oil you can simply add a small amount of water and stir.
Step 4: With a teaspoon carefully add the melted chocolate on top of the cookies, and drizzle with some grated nuts, sugar, or sea salt flakes.

Ingredients
- 10-12 medium-sized dates (see notes)
- 2 tbsp peanut butter
- 50-80 grams graham crackers (ideally sugar-free) (or similar ones like digestive biscuits, Marie biscuits, or rich tea biscuits) (see notes)
- 40-50 grams dark chocolate (sugar-free)
- 1 tsp coconut oil (optional)
- nuts of choice (optional – see post for more details)
Instructions
- Place the dates in warm water for 5 minutes so that they can peel better.
