Ingredients You Need

The main stars in this recipe are definitely potatoes and onions, and with the help of a few other basic pantry ingredients you will get this delectable and refreshing summer Potato Salad! Here are all the ingredients you will need:

Potatoes – You will need 5-6 medium potatoes. Use gold or Russet potatoes.

Onion – You can use black, yellow, or red onion, or combine them all. It’s your choice!

Lemon – You’ll need half a lemon for the salad dressing.

Apple Cider Vinegar – One common at-home cure is apple cider vinegar, which makes this salad refreshing and gives it needed juiciness! It has been used for ages in both natural medicine and culinary. Boiling potatoes is the simplest way to prepare them for potato salad. Here are two crucial pointers for successfully cooking potatoes.

First, cook the potatoes along with the husk. Whole potatoes, on the other hand, will require 20 to 25 minutes. Insert a knife into one of the potatoes to determine whether they are done. You’re set to go if it fits in with minimal effort!

Slice them around 1/3 inch (3 mm). When the potatoes are boiled, take the husk off, and start slicing them. By doing this, you can be sure that every potato piece cooks uniformly and thin enough.

How Much in Advance Can You Prepare Potato Salad?

When ready to serve, potato salad can be refrigerated or served immediately. Although leftovers can be kept for around 3 to 4 days, it is best served the same day it is prepared!

Also, I wouldn’t advise freezing potato salad since it doesn’t freeze well.

Ingredients
  

  • 5-6 medium potatoes (gold, red or Russet)
  • 1 big yellow onion (white or red)
  • half a lemon (lemon juice)
  • 2 tbsp apple cider vinegar
  • extra virgin olive oil (for drizzling; per taste)
  • salt & black pepper (per taste)
  • dill or parsley (minced)
  • tuna (optional)
  • hard-boiled eggs (optional)
  • mayonnaise (optional)

Instructions
 

  • If you're not in a hurry, you can wash it well, then boil it, cool it, then peel it, and slice it (1/3 inch /3 mm wide) or cut it into rings or cubes. If you're in a hurry and you don't mind if the potatoes fall apart a little while stirring (the taste remains the same anyway), you can peel them, cut them, and then place it to boil. I prefer the second way because the cooking and preparation process is much shorter.
  • Peel the onion, cut it into thin slices, and place in a medium bowl. Season it with salt and pepper, pour in lemon juice, vinegar, and olive oil, then let everything sit while the potatoes cool.
  • Place the potatoes in a bowl with the onion and spices and mix everything gently but thoroughly. If necessary, add more salt, pepper, or vinegar. Serve and enjoy!
