Ingredients You Need

Corn flour – Don’t confuse it with Polenta. Although milled, dried maize is the source of both cornmeal and corn flour, their textures are very different. While maize flour is smooth and fine, cornmeal has a grainy texture.

Yogurt – You’ll need 200 milliliters of plain yogurt.

Eggs – In most cornbread recipes, eggs are a necessary ingredient. They serve as the blinders needed to bind the batter and produce a cohesive loaf of bread.

Baking powder – You’ll need a whole 10-12 grams packet (approximately 2 full teaspoons).

Oil – You’ll need one neutral-tasting oil with a high smoke point. I tried this recipe with sunflower oil and extra virgin olive oil and it was totally fine. You most probably won’t taste it because of the taste strength of cottage cheese!

The Difference Between Corn Flour And Cornmeal

It can be very perplexing to figure out what exactly corn flour is, and it is often confused with cornmeal. So, here I found a good explanation of the Cornstarch, Corn Flour, Cornflour and Maize Flour: What’s the Difference? Here’s a quick summary of key things:

Corn flour is obtained by grinding entire dried corn kernels into a fine powder. It’s basically very finely ground corn meal. In addition to the starch, it also contains fibre, protein and a small amount of fat. There are two types of corn flour: the more common yellow corn flour that’s made from yellow corn, and white corn flour made from white corn kernels. You can technically use the two varieties interchangeably, but whenever I mention ‘corn flour’ in my recipes, I’m referring to yellow corn flour.


How To Make

Step 1: Preheat the oven to 350F (180 C). Grease a 12 x 8” (30x20cm) baking pan with oil or cover with parchment paper.

Step 2: In a medium bowl, add the cottage cheese and add in whisked eggs, baking powder, salt, oil, and plain yogurt. Mix it all well with a spatula.

Step 3: Start adding flour little by little stirring simultaneously (don’t pour everything at once, since there may be a difference in the needed amount due to the flour brand type, so estimate the right thickness, adding gradually).

Step 4: Pour the mixture into the baking pan and bake for 20-35 minutes, checking the progress occasionally after 20-25 minutes of baking (ovens vary).

Why Does My Cornbread Crumble?

There may be different reasons why your cornbread is crumbling too much but know that cornbread is naturally crumbly, if it’s a crumbly mess look for possible reasons:

  • Eggs – Eggs provide structure and texture. They help all the ingredients connect. So, if you haven’t been using eggs in your cornbread before, you may try it and the difference will be noticeable drastically.
  • Too much corn flour– The glutens in the flour can’t hold the bread together if you add too much corn flour. Reduce the amount of corn flour you use.
  • Too much oil – Depending on the cornflour brand type you may need to adjust the amount of oil. Start by adding little by little while stirring, not the full measure from the recipe.

  • 250 grams cottage cheese
  • 2 large eggs (or 3 smaller) (at room temperature)
  • 200 mL plain yogurt
  • ¼ to ⅓ (60-80 mL) high-quality neutral-tasting oil (with high smoke point) (I used extra virgin olive oil)
  • 2 tsp (1 packet of 10-12 grams) baking powder
  • salt (to taste) (only if the cottage cheese is unsalted)
  • 180 grams corn flour
