Ingredients you need
- Spelt flour – Use organic spelt flour.
- White flour
- Honey – Use raw, unsweetened honey.
- Filtered water
- Olive oil – I used extra virgin olive oil.
- Salt – Ideally fine sea salt or Himalayan salt.
- Instant yeast – 1 packet. Mine was 10 grams.
Is Spelt Bread Healthy?
Spelt, with its mild, nutty flavor, with high-protein content, is a popular alternative to wheat. It also provides several essential nutrients, such as iron, magnesium, and zinc. Spelt is a kind of wheat. It includes gluten and has a very similar nutritional profile to wheat. So, those who have a wheat allergy, gluten sensitivity, or celiac disease should not use it.
Spelt has a high carb content, much as other grains. It also includes several vitamins and minerals, is a decent source of protein, and is a great source of dietary fiber. (1)
How To Make Healthy Spelt Bread
In case the whole bread-making process intimidates you at first thought, thinking you don’t have enough skills and the first image that comes to your mind is getting all messed up while kneading bread, let me tell you the best news… the rolling pin is not required! Phew, a sound of relief Xd
This is probably the easiest, and simultaneously probably the healthiest bread option you can make in a matter of 10-15 minutes of actual work, with minimal ingredients!
STEP 1: The first step is to sift the spelt flour and white flour to ensure you don’t end up with lumps of unincorporated flour.
STEP 2: In one large bowl, mix all the ingredients (350 grams spelt flour, 125 grams white flour, sprinkle some fine salt, 1 instant yeast, 2 tsp raw honey, and 400-420 ml warm water). Mix until all ingredients are well incorporated. The dough must not be too thick.
Important Note – How much warm water to add? – There may be variations in the amount of water that needs to be added because of the different types of flour which depends on the brand you’re using. Start adding little by little while simultaneously stirring the bread mixture. Do not add all the 420 mL – add approximately 380-400 mL to estimate – if the texture is too thick, continue adding water carefully.
With your hands start kneading the bread while still in the bowl – when the flour starts to separate from the walls of the bowl, cover it with plastic wrap.
The dough is sticking to the bowl walls? If the dough is sticking to the walls of the bowl while kneading it with your hands, add a little more flour and continue kneading with your hands until it is not sticking anymore.
Let the bread dough rise in a warm place (simply place it somewhere at room temperature, if you need to, cover it additionally with something that will warm it more – like a blanket) for around 30 minutes.
STEP 3: After 30 minutes, transfer the dough to the table drizzled with some flour (to prevent sticking), and shape the bread dough – form the loaf.
STEP 4: Transfer the formed loaf to a bread mold for baking lined with parchment paper. If you don’t have parchment paper or if you simply want to go the old-fashioned way like me, you can grease the baking mold with a cooking spray like olive oil or sunflower oil. After greasing your baking mold, you should sprinkle some flour over it and shake and roll it around to ensure that the flour sticks to the oil. When the flour remains attached evenly, tap off the extra into the trash can.
STEP 5: Leave in a warm place for another 30 minutes.
STEP 6: After the dough has risen, if you want you can add – sprinkle some sesame seeds/chia seeds, flaxseeds, or sunflower on it as a topping – place it in the oven, and bake at 180° C (356° F) for approximately 30-40 minutes (ovens vary). Make sure to check occasionally to make sure the dough is baking properly.
To check if the bread has been baked, after 20-25 minutes, insert a clean toothpick into it, if it comes out clean and without any sticking remains, it is well-baked.
STEP 7: When the bread is baked, cover it with a kitchen towel for 5 minutes to ensure the heat helps it stay tender and soft. Let it cool down before serving.
Tips, Ideas And Alternatives
- Make sure to add flour with a spoon to your measuring cup – If you simply scoop from the canister with a measuring cup, you will end up with far more flour than this recipe asks for.
- Don’t forget to sift the flour – The first step is to sift the spelt flour and white flour to ensure you don’t end up with lumps of unincorporated flour.
- Instant yeast does not require activation; instead, it may be directly added to the dry components in a recipe. It is possible to prove it in advance, but it is not necessary, and doing so will not affect the activation procedure.
- When still warm after baking, the bread can leave crumbs when sliced. Make sure to leave it for some time to cool down, then it will be ready for eating without creating a mess out of crumbs!
