Ingredients
- 200 grams cauliflower

- 1 tbsp semolina
- 1 leek
- 1 tsp sea salt/Himalayan salt
- seasoning by choice
- 1 tbsp fresh parsley
- 1 vegetable bouillon cube
- Greek yogurt (optional)
Instructions
- Chop all the ingredients – cauliflower, carrot, leek, zucchini, potato, and parsley.
- In a big pot add 1 to 1.5 liters of water, and add all the chopped ingredients + vegetable bouillon cube, salt, pepper, and another additional suitable seasoning of choice you have at hand.
- Cook for approximately 20-30 minutes – until the veggies are well softened, stirring occasionally. 5 minutes before removing from the stovetop, add 1 tablespoon of semolina to help thicken the mixture a bit. Continue stirring occasionally.
- When well cooked, remove from stovetop and serve! Add a few tablespoons of Greek yogurt to the soup to enhance flavor – optional, but significantly betters the overall taste and flavor!
