Our garden is blessed with 4 zucchini plants that are producing a lot of fresh zucchini! One of my favorite vegetables to grow in my garden is definitely zucchini! It grows really quickly and we always have a lot! It works well in savory dishes like Easy Stuffed Zucchini Boats as well as sweet ones like Zucchini Breadsticks or Zucchini Carrot Fritters!

Even though is one of those veggies that is, in my opinion, just kind of meh – flavorless. How then can we make it taste good? Of course, add cheese and lots of seasonings! These easy-to-prepare oven-roasted zucchini slices require only a few ingredients and are consistently popular.

Ingredients You Need

When cooking zucchini, I most often bake it with just seasonings and butter! You can add some other additional ground herbs and spices to fit your taste. The cheese can be replaced with almost any type of cheese you have at hand, so don’t worry about it, just make sure to check its saltiness before salting your zucchini.

Zucchini – You’ll need 1 large zucchini or 2 medium ones.

Melted Butter – You can also use olive oil or melted lard, but I find the melted butter gives it the richness it needs! Since I rarely use oils because I can’t seem to find the right not-so-much-refined neutral-tasting oil, and I’m not sure about the safety of exposing extra virgin olive oil to high temperatures, I tend to stick to butter and organic lard.

Tomato Sauce – I used my homemade one, so I recommend the same since it’s so much better and healthier than the store-bought one!

Parmesan Cheese

Oregano & Additional Seasonings (of choice) – You can add some ground herbs, Chayyene pepper, or garlic powder.

How To Make Baked Cheese Zucchini Slices

This is a really tasty and simple side dish that can be served as almost every lunch option. First, thinly slice some fresh zucchini. After that, sprinkle the zucchini slices in a mixture of butter, salt, pepper, and spices. Roast them in the oven until they become crispy and golden, sprinkle with shredded Parmesan, and put back in the oven to roast to perfect and for the cheese to melt!

Step 1: Preheat the oven to 375 F (190 C). Wash the zucchini and dry it with a towel. Slice the zucchini lengthwise into a few strips using the long knife (approximately 1/5 inch (5 mm)). Using only one hand, hold it while cutting, be careful not to cut yourself!

Step 2: With a brush, coat each slice with melted butter, sprinkle salt and pepper on each slice, and add some additional seasonings if you like. Place it in the preheated oven, and bake for approximately 10-15 minutes (until zucchini softens and slightly gets golden on the edges).

Step 3: When the zucchini is baked, with a teaspoon start adding tomato sauce on each slice then coat each slice with grated cheese, and sprinkle with oregano and additional seasonings if you like. Place it back in the oven and bake until the cheese melts and the zucchini is well baked (soft and slightly golden on the edges).

Step 4: Add some Feta cheese on top if you desire, serve it, and eat it while it’s still warm! Enjoy!

  • 2-3 tbsp butter
  • ½ cup tomato sauce
  • salt (to taste)
  • oregano (to taste)
  • Feta cheese (optional)
