Ingredients Needed

  • Dates: Make sure they’re pitted! If they’re a bit dry, soak them in warm water for 10 minutes to soften them up.
  • Almonds (blended): Use raw or roasted, whichever you prefer. If you like extra crunch, don’t blend them too finely! Alternatively you can use some other blended nuts like hazelnuts, cashews or pistachios!
  • Oats (blended): Blending the oats into a fine powder helps everything stick together nicely. Use gluten-free oats if needed!
  • Lemon juice: Freshly squeezed is best for that bright, fresh flavor! A little zest adds extra zing, so don’t skip it if you have lemons on hand.
  • Honey or maple syrup (optional): If you like things sweeter, add a bit of this! It also helps with binding everything together.
  • Dark chocolate (melted): Melt it for an easy, rich topping! A microwave works great—just heat in short bursts to avoid burning it.
  • Salt: A tiny pinch helps balance out the sweetness and bring out the flavors!

How To Make: Step-By-Step

Step 1: Prepare the Ingredients

  • Pit the dates if they aren’t already pitted. If your dates are a little tough or dry, soak them in warm water for about 10 minutes to soften them up. This makes blending much easier!
  • Blend the oats into a fine powder. You can do this in a food processor or blender. Set them aside for later.

Step 2: Blend the Almonds

  • Place the almonds in your food processor or blender, and pulse until they’re finely ground. You don’t need them to be as fine as flour, just small enough to mix well with the other ingredients.

Step 3: Add the Dates

  • Add the softened dates to the ground almonds in the food processor. Blend until the mixture starts to stick together and form a dough-like consistency. You might need to stop and scrape down the sides to make sure everything blends evenly.

Step 4: Add Blended Oats and Lemon

  • Add the blended oats, lemon juice, and lemon zest (if using) to the date and almond mixture. This is when you can also add a pinch of salt and any honey or maple syrup if you like your energy balls a little sweeter.
  • Blend again until everything is well combined. The mixture should be sticky enough to hold together when pressed.

Step 5: Roll into Balls

  • Once everything is mixed, scoop out small portions of the dough (about a tablespoon) and roll them into balls using your hands. If the mixture feels too sticky, wet your hands slightly to make rolling easier.

Step 6: Melt the Chocolate

  • Melt the dark chocolate in the microwave or over a double boiler. If you’re using the microwave, heat it in 15-second bursts, stirring in between, until the chocolate is fully melted and smooth.

Step 7: Coat the Energy Balls in Chocolate

  • You can either dip the tops of the energy balls into the melted chocolate or drizzle it over the top using a spoon. Place the coated balls on a tray lined with parchment paper so they don’t stick.

Step 8: Chill and Enjoy!

  • Put the tray in the fridge for about 30 minutes to let the chocolate set. Once the chocolate hardens, they’re ready to eat!

Tips, Ideas & Alternatives

Tips:

  • Blend the dates well: If your mixture is too crumbly, it means the dates haven’t blended enough. You want everything to stick together, so make sure they’re blended until sticky and smooth!
  • Use a cookie scoop: For even-sized balls, a small cookie scoop works wonders! It’ll help you get them all the same size, which is great for portion control and consistency.
  • Chill for extra firmness: If your energy balls feel a bit soft, pop them in the fridge for 10-15 minutes before rolling to firm them up and make the rolling process easier.

Ideas:

  • Add seeds: Toss in some chia, flax, or sunflower seeds for an extra nutritional boost and a little texture.
  • Mix in dried fruit: Dried cranberries, apricots, or raisins would add some chewiness and a sweet contrast to the nuts and dates.
  • Spices: A pinch of cinnamon or ginger can add a cozy twist to the flavor.

Alternatives:

  • Other nuts: You can swap almonds for cashews, walnuts, or even pistachios, depending on what flavor you like best.
  • Different fruit: If you don’t have dates, you can try dried figs or raisins for a similar texture and sweetness.
  • Coconut: Add some unsweetened shredded coconut to the mixture for a tropical touch. You could even roll the balls in coconut flakes for extra flavor!
  • Chocolate coating: Try white chocolate or milk chocolate if you prefer a different chocolate experience! Or skip the coating altogether and roll them in cocoa powder for a chocolaty twist.

Healthy Energy Balls with Dates, Almonds & Lemon – No Bake & Gluten-Free Recipe!

Oh, you’re going to love these energy balls! They’re sweet, zesty, and just the right amount of indulgence. The dates and almonds bring such a nice, natural sweetness, and when you blend those oats, they give the perfect texture to hold everything together. And, of course, that little bit of lemon juice? It gives a fresh pop that makes these treats so special!
Prep Time 30 minutes
Total Time 30 minutes
Servings 12 energy balls

Ingredients

  • Dates (pitted) – 2/3 cup (100g)
  • Almonds (blended) – 3/4 cup (about 100g)
  • Oats (blended) – 6 tablespoons (about 45g)
  • Juice of 1 lemon – 3 tablespoons (45ml)
  • Lemon zest (optional) – 1 teaspoon (2g)
  • Salt – A pinch
  • Dark chocolate (melted, for drizzling) – 1/4 cup (50g) (optional)

Instructions

  • Blend the almonds into a fine powder using a food processor or blender.
  • Add the dates (pitted) and blend until the mixture starts to come together and becomes sticky.
  • Add the oats, lemon juice, lemon zest, and salt. Blend again until everything is well combined and the mixture sticks together when pressed. (see notes, if too sticky)
  • Roll the mixture into small balls, about the size of a golf ball. Wet your hands slightly if the mixture is too sticky.
  • Melt the chocolate and drizzle it over the tops of the balls, or lightly coat them with the chocolate.
  • Chill in the fridge for about 30 minutes to set the chocolate and firm up the energy balls.

Notes

The mixture is too sticky? If the mixture is too sticky, here are a few simple fixes:
  1. Add more oats: A tablespoon or two of extra oats will help absorb some of the moisture and make it easier to roll into balls.
  2. Add more powdered almonds: This will help thicken the mixture and make it less sticky.
  3. Chill the mixture: If it’s really sticky, pop it in the fridge for 15–20 minutes before rolling. This will firm it up and make the rolling process easier.
