Whole wheat flour/oat flour – You may grind your own oats using quick oats or old-fashioned oats, or you can use store-bought oat flour. If you have a gluten sensitivity, be sure they are gluten-free. You can also use whole wheat flour instead or mix the two.

Cottage Cheese: Both full-fat and reduced-fat varieties are OK. For the creamiest texture and finest flavor, I choose full-fat. You may replace the cottage cheese in this recipe with some other similar cheese. I once tried with Feta (mashed previously with a fork) and it turned out great!

Eggs: You may use a flax egg or chia egg as an egg substitute if necessary. One tablespoon of ground flaxseed meal and 2-3 tablespoons of water are combined to form a flax egg. It thickens over a few minutes. Use an equal amount of chia seeds to water to create a chia egg.

Milk (optional): I use milk or simply filtered water only if the mixture is too dry and obviously needs something liquid. Milk will additionally add flavor and texture to the pancakes.

Baking Powder & Baking Soda: Used to provide fluffiness and soft texture to pancakes.

Salt: You may use a small quantity of salt replacement or skip the salt entirely if the cheese is already highly salted. Make sure to use higher-quality salt, like sea salt or Himalayan salt.

How To Make

Step 1: Make The Pancake Butter

In a large bowl, add the cottage cheese, whisked eggs, honey, baking powder, baking soda, vanilla extract (if using), and salt, and mix with a spatula until smooth (alternatively, blend all the ingredients in a blender). Add flour to the mixture, and mix well again. If the mixture is too dry, just add some milk (carefully and gradually).

Step 2: Cook The Pancakes

Compared to regular pancake batter, this one will be thicker. As it sits, it will also become somewhat thicker. That’s alright. You want to cook these pancakes on low to medium heat since the cottage cheese might quickly overcook.

Preheat the olive oil/butter/lard in a pancake pan. With a tablespoon, take the batter from the bowl and transfer it to the pan to cook. Cook until the little bubbles start forming. After flipping, fry the pancake until it is golden, and gently browned on the other side.

Place the pancakes on the plate covered with a paper towel so it can soak up excess oil. Serve while it’s still warm! Enjoy!
