Ingredients You Need
- 2 Potatoes
- Cauliflower
- Carrot
- 2 Garlic cloves
- 2 eggs
- Flour
- Breadcrumbs
- Plant-based oil (for cooking)
- Salt
- Pepper
How To Make
- In a large pot, combine 2 potatoes, 200 grams of cauliflower, and a carrot. Add enough water to cover the veggies. Bring to boil over medium heat for about 20 minutes – until they soften, stirring occasionally.
- When the veggies are boiled, mash them using a potato masher. Add salt and pepper, and minced garlic cloves.
- Into that mixture, crack 2 eggs, 3 tablespoons of flour, and 2 tablespoons of breadcrumbs. Stir it all well. If the mixture seems to be too liquid, add a little bit more flour.
- Prepare a plate with a few paper towels on which you will transfer the patties (burgers) once done so that the towel can soak in excess oil.
- Prepare a pan for cooking, and add plant-based oil enough to cover the pan (1 or 2 tsp) on the stovetop over medium heat. Using a spoon, add 4 patties and cook until gold and crispy on one side, then flip to cook the other side as well.
- Transfer to a paper towel-lined plate, and wait for a couple of minutes for the towels to soak in excess oil. Enjoy!
