Mayonnaise  – I don’t know how the mix of Greek yogurt and mayonnaise sounds to you, but if you like it, you can make your own mayonnaise in just a few easy steps. Instead of buying one from the store with preservatives, you can easily make your own much healthier version.

I saw this super straightforward recipe on Allrecipes – you’ll be amazed at how quickly, and with minimal ingredients it can be made!

Basically, what you need are:

  • 2 large eggs, at room temperature
  • 2 teaspoons fresh squeezed lemon juice
  • 1 cup of neutral-flavored oil
  • Fine grain sea salt for seasoning and balancing the flavor

Instructions For Homemade Mayonnaise (Optional Ingredient)

  • Separate the egg whites from the yolks. Pour the egg yolks into the bowl for some other use. You don’t need it for this mayonnaise.
  • Whisk the egg yolks well after adding the freshly squeezed lemon juice to the bowl.
  • Pour the oil into the bowl gradually and carefully, a few drops at a time, whisking continuously.
  • Start adding the oil in a moderate, steady stream once the mayonnaise has begun to thicken. If any oil begins to accumulate, stop pouring and quickly whisk the mayonnaise until the oil is well combined.
  • If the mayonnaise becomes too thick, thin it with water to the desired consistency. One teaspoon of water at a time, approximately.
  • The mayonnaise should be thick and fluffy once all the oil has been added, with whisk ribbons visible throughout the mixture. Use a little pinch of fine-grain sea salt to season it. If you like a thinner mayonnaise, add a tiny bit of water.

Ingredients You Need for the mimosa salad

  • Potatoes (2-3 medium-sized potatoes)
  • Carrots (2 medium-sized)
  • Eggs (5-8 eggs (less/more depending on the number of layers you want))
  • Mozzarella, Cheddar cheese (or other type you can grate) (less/more depending on the number of layers you want) (around 300 grams)
  • Sour cream/Greek yogurt (I would recommend sour cream because it’s thicker) (200-300 grams)
  • Mayonnaise (preferably homemade – see the recipe above) (200-300 grams)
  • Pickles (2 medium-sized)
  • Canned Tuna (200-300 grams)
  • Sea salt/Himalayan salt

Important Note: The amount of ingredients depends on the size of the desired salad and the size of the bowl you are using. If you’re making for yourself and your family (like this recipe), the amount is going to be a lot less, but if you’re making for a larger gathering, the amount of eggs and potatoes, for example, is going to increase! It all depends on the number of layers you’re willing to make! Customize it as you like, freely change the amount of ingredients I wrote, and adjust to your preferences!

How To Make the Mimosa Salad

The whole process of making the Mimosa salad is adding layers on top of each other. That’s the whole philosophy! Lol, so easy!

Depending on what idea you choose, the combination of the layers may differ, but the choice is completely yours to customize however you like! Experiment a little, and see the magic!

Ideas For Layers

IDEA 1: less freshly tasted – without Greek yogurt/sour cream (but you can add it if you want!)

1. LAYER – potato/mayonnaise mix

2. LAYER – tuna/mayonnaise mix (+ sprinkle some diced pickles on top of it (optional)).

3. LAYER – carrot/mayonnaise mix

4. LAYER – cheese and egg mixture (you can mix just cheese and egg whites, and add separately egg yolks at the top of it, or, you can incorporate yolks together in the mix with cheese and egg whites)

THE DRESSING, TOP LAYER: add the remaining eg whites, grated cheese, carrots, and pickles…the choice for the decoration is yours! Let the creativity out!

Here Is A Step-By-Step Process:

Step 1: The first step is to cook the potatoes, eggs, and carrots. On medium heat place the potatoes and carrots to a boil and cook until they’re fork-tender. Potatoes will approximately need 20 minutes, and carrots 10-15.

Quick tip for making the perfect eggs – Put the pot over medium heat and bring to a boil. Sprinkle them with some salt, and a teaspoon of vinegar. This is to help them peel easier!

When the potatoes, eggs, and carrots are ready, we are also ready to prepare the actual Mimosa salad! Here we go!

Preparing The Layers:

Step 2: Preparing the potato layer: Add grated potatoes to a bowl, add 2-3 tablespoons of mayonnaise + and season with salt. Mix it with a spoon.

Pro tip 1: When mixing the potatoes, try not to apply a strong pressure and mix it too much causing the potatoes to lose their grated texture and become a baby porridge. Believe me, happened thousands of times! Just do it lightly.

Pro tip 2: For some of the layers you can also add some other seasoning sparks like freshly grated parsley, dill, black pepper, or leek. Some people love a stronger, richer taste, and some prefer a lighter one.

Step 3: Preparing the tuna layer: In another bowl, use 200-300 grams of tuna (drain off the liquids and oil), add 2 tablespoons of mayonnaise (preferably the healthier, homemade version), and season it with sea/Himalayan salt to taste. If you want, you can also sprinkle some diced pickles on top of it!

Step 4: Preparing the carrot layer: In another small bowl, grate the carrots. We’re repeating the mayonnaise mixing part, and adding 1-2 tablespoons of mayonnaise, and mixing it with carrots + seasoning with salt.

Step 5: Preparing the cheese and egg mixture: In another bowl, add grated cheese, and mix with grated eggs – (you can mix just cheese and egg whites, and add separately egg yolks at the top of it, or, you can incorporate yolks together in the mix with cheese and egg whites).

Adding Layers

Step 6: Choose the big clear glass bowl or a casserole pan where you are going to place and serve the actual salad, and let’s start adding layers!

Step 7: First, add the potato layer to your chosen salad bowl/pan, and gently press with a fork following the shape of the bowl/pan.

Step 8: Second, add the tuna layer, and gently press with a fork following the shape of the bowl/pan. Sprinkle some diced pickles on top of it.

Step 9: Third, add the carrot layer, and gently press with a fork following the shape of the bowl/pan. Sprinkle some diced pickles on top of it.

Step 10: Fourth, add the cheese and eggs layer, again, pressing with a fork following the shape of the bowl/pan. Sprinkle some diced pickles on top of it.

Step 11: THE DRESSING, TOP LAYER: add the remaining eg whites, grated cheese, carrots, and pickles…the choice for the decoration is yours! Let the creativity out!

IDEA 2: more freshly tasted – with Greek yogurt/sour cream

For the second idea, just like my grandma loves to make, we’re going to start with grated cheese at the bottom and add the rest of the layers on top of each other.

Note: Make sure to press each layer gently and well, following the shape of the bowl/pan.

The difference is that, here, we are using the basic, plain ingredients and not mixing them with mayonnaise.

Note: You can do the mayonnaise and yogurt/cream mixture like 2-3 tablespoons of mayonnaise + 2-3 tablespoons of yogurt (cream) for each layer.

3. LAYER: Mix of mayonnaise and Greek yogurt/sour cream

What Is The Necessary Equipment For Preparing This Mimosa Salad?

You can arrange this Mimosa salad in a clear glass bowl, which I recommend the most, so all the vibrant colors and layers can be seen.

You can also arrange it in a casserole pan, or even a springform pan and place it on a cake stand!

  • 2 medium-sized Carrots

  • around 300 grams Cheese Mozzarella, Cheddar cheese (or other type you can grate) (less/more depending on the number of layers you want)
  • 200-300 grams Sour cream/Greek yogurt
  • 200-300 grams Mayonnaise  (preferably homemade – see the recipe above) 
  • 2 medium-sized Pickles 
  • 200-300 grams Canned Tuna 
  • Sea salt/Himalayan salt
  • Leek (diced) (optional)

Instructions

IDEA 1: we will need a few smaller bowls for mixing each layer and one big bowl/casserole pan where the actual salad will be placed.

  • Preparing the potato layer: Add grated potatoes to the first bowl, add 2-3 tablespoons of mayonnaise + season with salt. Mix it with a spoon.
    Add the potato layer to your chosen salad bowl/pan, and gently press with a fork following the shape of the bowl/pan.
  • Preparing the tuna layer: In another bowl, use 200-300 grams of tuna (drain off the liquids and oil), add 2 tablespoons of mayonnaise (preferably the healthier, homemade version), and season it with sea/Himalayan salt to taste. If you want, you can also sprinkle some diced pickles on top of it!

    Add the carrot layer, and gently press with a fork following the shape of the bowl/pan. Sprinkle some diced pickles on top of it.
  • Preparing the cheese and egg mixture: In another bowl, add grated cheese, and mix with grated eggs – (you can mix just cheese and egg whites, and add separately egg yolks at the top of it, or, you can incorporate yolks together in the mix with cheese and egg whites).
    add the cheese and eggs layer, again, pressing with a fork following the shape of the bowl/pan. Sprinkle some diced pickles on top of it.
    Note: don't use all the amount of cheese and eggs, leave some to sprinkle for the dressing part!
