Ingredients You Need

  • Graham Crackers. We need 1 cup of added sugar-free graham cracker crumbs. You can buy them already crushed, or you can pulse graham cracker rectangle sheets in the food processor until sandy.
  • Butter/Dairy-Free – You’ll need 2 tablespoons of melted butter or dairy-free milk to make the crust.
  • Honey – Raw unsweetened honey is a wonderful healthy alternative to refined sugar.
  • Cream Cheese/Greek Yogurt/Sour Cream – Cutting cream cheese into smaller pieces and letting it lie at room temperature is the easiest method to soften it entirely. Don’t use a microwave or oven. Alternatively, you can use Greek yogurt or sour cream.
  • Lemon zest (optional) – To mix it with the cream cheese and honey for the white filling.
  • Vanilla Extract (optional). One teaspoon of real vanilla extract.

How To Make Cheesecake In A Cup

Important note: There are a few options to choose from when making these Cheesecake cups. You can make only 1 layer of the crust and one layer of the white filling or 2 and more! Everything depends on your preferences and the amount of ingredients you have at hand. I made mine with 2 layers of both crust and filling and 1 layer (the top) of mashed strawberries.

Step 1: Make the crust. The first step is to make the crust with graham crackers or other cookie crumbs and melted butter. Crackers and butter should be combined in a bowl until the crumbs are fully soaked; they should have the consistency of wet sand. Then, to create a crust, split them equally and firmly push them into your serving cups. If you’re making 2 layers of the crust, don’t use all the crumbs, but rightly measure the needed amount for both.

Step 2: Make the filling. In a medium bowl, combine the cream cheese with honey and lemon zest and mix it with a rubber spatula. If the cream cheese is not soft enough to be mixed only with a spatula, use an electric mixer to simplify the process. Again, If you’re making 2 layers of the filling, don’t use all the filling you made, but rightly measure the needed amount for both.

Step 3: Put into cups. The cheesecake filling should be equally distributed over the crusts using a spoon or piping bag.

Step 4: Garnish. As a garnish, you may use any fruit that pairs nicely with cheesecake, such as tropical fruits like raspberries, blueberries, strawberries, and cherries.

Step 5: Serving. Serve immediately, or keep for an hour in the fridge to harden a bit.

Garnish Ideas For Cheesecake In A Cup

  • Berries – Berries are the perfect addition to a cheesecake in the spring and summer! Incorporate a few of raw raspberries, strawberry pieces, blueberries, or blackberries or just use one sort. The best thing is that you don’t even need to cook them and add gelatin! Mashing them with a fork is the easiest option and the only thing required!
  • Banana – Mashed bananas are also a wonderful topping for these Cheesecake Cups even though they’re not a popular option, but you can always experiment with new and interesting tastes!
  • Chocolate – These no-bake cheesecake cups are delicious with the chocolate magic on top! To make it, combine 1 cup of high-quality dark chocolate with a tablespoon of coconut oil. Melt in the microwave on low or in a double boiler until smooth. Pour it on the cheesecakes after they have fully chilled in the fridge. It will harden immediately!
  • Other fruits – Pomegranate arils, kiwi slices, or mango cubes are suitable substitutes for berries when they’re not in season.

Variations

  • Flavorings: Incorporate flavorings into the cheesecake mixture, such as almond extract, lemon, or orange zest, or even add a few drops of fresh lemon juice.
  • Graham crackers substitute: Use digestive biscuits, arrowroot biscuits, vanilla wafers, or ginger snaps instead of graham crackers.
  • Filling ideas: Use chocolate syrup, honey, or caramel sauce directly into the cheesecake filling.
  • Cream cheese substitute: Instead of cream cheese, Greek yogurt or even sour cream will work perfectly!
