Ingredients You Need

These Pizza Muffins can be made in many versions and each has its own spark and flavorness. You can omit some of the ingredients and use only the necessary ones, but on the other hand, you can load them with many veggies and make them a veggie bomb!

If you want to make it the non-vegetarian version, you can add some meat, like hum.

Flour – For this recipe, I used semi-whole-wheat flour, and haven’t tried with other types, so I can’t give you the guarantee that just any type of flour would work like semi-whole, sorry ;/

Eggs – You will need 2 eggs.

Mushrooms Almost any kind of mushroom will work. I combined shitake and brown mushrooms (also known as gourmet, cremini/crimini, or chestnut mushrooms) in this variation. However, medium-sized portobello mushrooms can also be used.

Yogurt –

Cooking/Baking Safe Oil – There are different plant-based oils you can use based on your preference and what you have at hand, but also should be careful about what kind of oil you’re using and what quality. I personally tried mine with sunflower and olive oil. Here you can find what are some of the healthy cooking oils.

Cheese – You will need cottage cheese, but I also think that goat cheese or cream cheese would also work well, however, I haven’t tried it.

Salt – Preferably not using table salt, but sea salt or Himalayan salt.

Dried oregano – You can also switch it for some other seasoning, like dried thyme, or other herbs and spices you prefer.

Baking powder

Carrots, spinach, zucchini, tomatoes (optional)


Ideas And Alternatives

  • Use ham instead of mushrooms – I wanted to make this a veggies-rich pizza muffins version and vegetarian, but I didn’t use ham even if many recipes call for it. However, you can switch it and use hum instead.
  • Add other veggies – To make these Pizza Muffins even more interesting, vibrant, and appealing, you can add some additional veggies like grated carrots, spinach, zucchini, or tomatoes.

How To Make

The whole process of making the Pizza Muffins is insanely easy you won’t believe it!

Step 1: If you are using mushrooms as one of the dry key ingredients, the first step is to sauté them a bit. If you are using ham, skip this step.

Prepare 300-400 grams of mushrooms. Wash the mushrooms, and dice them to the desired size to prepare them for cooking.

Heat the olive oil (or other preferred cooking oil) in a large pan on medium heat, and add the sliced mushrooms. Cook the mushrooms until they let their water out and it evaporates, stirring constantly.

Step 2: Whisk 2 eggs and season with salt. Add all the other ingredients and mix it all together until well combined.

Step 3: Add the mixture to the muffin pan and bake for approximately 25 minutes at 180 ° C (356 °F)

Ingredients
  

  • 2 eggs
  • 200 mL yogurt
  • 80 mL high-quality cooking oil (+ 1 tbsp for sauteing mushrooms)
  • 220 grams white whole wheat flour
  • 100-150 grams mushrooms (sauteed) (diced)
  • 100 grams cottage cheese
  • 1 tsp salt (sea/Himalayan salt)
  • 2 tsp dried oregano
  • 1 baking powder (12 grams)

Instructions
