Scrambled Eggs With Cottage Cheese And Onion

- 1/2 cup cottage cheese
- 1 small onion, finely chopped
- 1 tablespoon butter or olive oil
- Salt and pepper to taste
- Fresh chives or parsley (optional, for garnish)
Instructions
- Prepare the Ingredients: Finely chop the onion. Crack the eggs into a bowl and whisk until well combined. Add salt and pepper to the eggs, according to your taste.
- Cook the Onions: In a non-stick skillet, heat the butter or olive oil over medium heat. Add the chopped onion and sauté until translucent and slightly golden, about 2-5 minutes.
- Scramble the Eggs: Reduce the heat to medium-low. Pour the whisked eggs into the skillet with the onions. Let the eggs sit for a few seconds until they start to set around the edges.

- Serve: Remove the skillet from the heat and transfer the scrambled eggs to a serving plate. Garnish with fresh chives or parsley if desired. Serve immediately.
Notes
- Low and Slow: Cook the onions over medium-low heat to ensure they caramelize gently without burning, which brings out their natural sweetness and flavor.
- Creamier Texture: For extra creaminess, you can blend the cottage cheese with the eggs using a blender or food processor before adding them to the skillet. This creates a smoother consistency throughout the eggs.
- Seasoning: Taste and adjust the seasoning before serving. Sometimes a pinch more salt or a dash of hot sauce can really bring out the flavors.
- Fresh Herbs: Experiment with different herbs like thyme or dill for added freshness and aroma. Add them towards the end of cooking to preserve their flavor.
- Variations: Don’t hesitate to customize! Try adding diced bell peppers, spinach, or mushrooms for added texture and nutrition.
- Serve with: Consider serving your scrambled eggs with whole grain toast, avocado slices, or a side of fresh fruit to make it a complete and balanced meal.
- Leftovers: If you have leftovers, store them in an airtight container in the refrigerator. They can be reheated gently in a skillet or microwave for a quick breakfast or snack the next day.

I don’t think I’ll ever make eggs without onions again! I halved the recipe and I only had a red onion, used about 2 tbsp chopped, but what a difference it makes! Served with avocado toast. Will make again!
