Spinach Eggs Bake Recipe – Quick Appetizer And Side Dish Idea

This low-carb, immune-boosting Spinach Eggs Bake is a simple appetizer, lunch idea, or side dish that is loaded with nutrient-rich spinach and then baked until it is warm, creamy, and crispy. It has a lot of flavor and is Greek yogurt and garlic-flavored!

This nutrient-rich Spinach Egg Recipe is one of my favorite side dishes, appetizers, and lunch ideas that is super healthy and nutritious. It simply has the right amount of eggs and spinach, cooked gently until it’s perfectly warm. Not to mention the crispy areas on the borders and surface that are golden brown.

I really adore this dish since it’s incredibly fast and tastes just as delicious as an expensive restaurant version due to a few shortcuts. Using frozen spinach is easier for me than buying plenty of fresh spinach just to have it cook down to nothing. That’s why I like using frozen spinach. Just be sure to squeeze out all of the water after thawing.

Ingredients You Need

Spinach – You can use fresh or frozen spinach it doesn’t really matter.

Eggs – You’ll need 3 medium-sized eggs.

Garlic cloves – Adjust to taste, there’s no specific number. I used 3 garlic cloves.

Milk – You can use both dairy and non-dairy milk. Make sure to choose one with a neutral flavor.

White whole wheat flour

Seasonings of choice – Something like Italian seasoning, ground cumin, nutmeg, pepper, turmeric, curry, paprika, oregano…

How To Make

The whole process is super easy and doesn’t require any special equipment, ingredients, or preparation steps. Here’s a step-by-step process.

Step 1: The first step is to cook/blanche the spinach. Place 500 mL water to boil in a medium-to-large pot. When water starts boiling add spinach and wait till it softenes (30 seconds to a minute). When ready, remove it to cool down and plunge into ice water (or cold water only). Then, squeeze out all the water from the spinach.

Step 2: Mince garlic cloves, and in another medium bowl whisk 3 eggs and add 500mL milk to it. Stir it well. Preheat the oven to 200 °C to 392 °F.

Step 3: Take your heat-resisting baking dish where you’ll bake your spinach, and add olive oil to it. Heat olive oil on medium heat. (if you’re planning on baking in another dish not suitable for sauteing, use another one more suitable for it, and just transfer to the baking dish when ready). Add 1 tablespoon of flour, minced garlic cloves, and cooked spinach. Cook until the cloves become translucent, and spinach wilted, and a ticker texture forms. Add egg and milk mixture and stir it all well. Add desired seasonings and salt to taste.

Important note: I used only 1 dish for both sauteing and baking spinach. You can do it too if you have a heat-resisting baking dish. If not, just saute spinach and cloves in a more suitable one and transfer to the baking dish when ready.

Step 4: Place to bake for approximately 30 minutes or until it becomes firm and golden on top and edges.
