Ingredients You Need

  • 1 medium zucchini (300g)
  • 8 tablespoons white whole wheat flour
  • 2 eggs
  • Sea salt
  • Baking powder (2 tsp)
  • Heat-resistant plant-based oil (for cooking)

How To Make

  1. The first step is to prepare the zucchini – Grate the zucchini using a bow grater, and before transferring it into the medium bowl, with hands, squeeze out the excess moisture from the zucchini.
  • In a bowl with grated zucchini, first add 3 tablespoons of white whole wheat flour, and stir it well. Crack 2 eggs, and add to the mixture. Stir it well again, and add another 5 tablespoons of flour. Salt it to taste with sea salt or Himalayan salt.
  • Add 2 teaspoons baking powder (12 grams – 1 packet). Stir it all together evenly.
  • Preheat a pan over medium to low heat, and add heat-resistant plant-based oil (I used sunflower oil) enough to cover the pan. Also, prepare a plate with a few paper towels you’ll place below and on top of the fritters once they’re ready, so it can soak excess oil from the fritters in case you put more.
  • With a spoon, add the mixture to the pan for cooking (I add 4 simultaneously), and wait for around 15 to 30 seconds for each side to cook, and flip to the other side to cook as well until it gets that golden-brownish look. How much you’ll wait for one side depends on the size of the fritters, as well as on the amount of oil you put in. If you exaggerate a bit with oil, the fritters will cook a lot faster – have that in mind.
  • When each fritter individually is ready, place it on the plate covered in a paper towel, and leave for a couple of minutes so that the towel can soak in excess oi, and for the zucchini fritters to cool a bit. Enjoy!

Pro tip: Don’t exaggerate too much with oil when adding it to the pan for pre-heating – it will result in your zucchini fritters literally swimming in the oil, and therefore, it may be harder for the paper towel to soak in excess oil from them. Add enough oil to cover the pan, but don’t exaggerate, or put too little – the fritters will easily burn in that case!

Alternatives, Tips, And Ideas

  • In case your Zucchini Fritters seem to fall apart, can’t hold well, or get stuck to the pan, make sure to use enough oil, preheat the pan, and do not flip too soon or too many times. You can also use a non-stick cooking pan, and simplify the process. Also, the problem may lay in the possibility that you didn’t use enough flour, since it helps create structure. If you’re using whole wheat flour – you may need to add more amount of it, and it can possibly make your zucchini fritters denser, and maybe not so fluffy.
  • Squeeze excess liquid from Zucchini – Squeeze grated zucchini over a bowl with clean hands to get rid of extra moisture.
  • When cooking fritters, make sure not to cook at too high a temperature – it can result in your zucchini fritters quickly getting undercooked on the inside, and the outside will get golden-brownish a lot quicker, and may even get burned. The safest way is to cook it at medium to low heat to give it enough time for each fritter to get evenly cooked.
